Context

Cantonese dim sum, briefly

You cannot renew a tradition you have not sat inside.

Dim sum is not a dish. It is an occasion — 飲茶, yum cha, literally “drink tea.” The food is what happens while the tea is poured.

點心 is usually rendered “touch the heart.” The honest translation of the whole idea: small things, ordered slowly, in company.

Where it comes from

Engineered for a long sitting.

Why that matters to a frozen product. A food designed for grazing was never designed to be a meal. The portion size, the starch-forward construction, the incidental protein — all of it follows from that. Changing what it delivers means changing the formulation, not the form.

Siu mai, specifically

A sealed dumpling can carry a mediocre filling and survive on its wrapper. Siu mai cannot.

A dumpling that hits the numbers and stops being dim sum has failed the only test that matters.
