How much protein is in dim sum?

Dim sum was never designed to be a protein food. That is not a criticism of it — it is a description of what it was for.

Dim sum is a small-plate format built for 飲茶 — yum cha, tea drinking. Protein appears in it, but incidentally.

Dim sum with real protein is dim sum where the protein and fibre are designed in rather than left to chance. The form stays Cantonese. The formulation does not.

Why a dumpling is structurally low-protein

Not a failure of effort. Geometry.

The consequence. A bite-size dumpling is a starch-forward food whether anyone intended it or not. Across 20 products the median was 9.5 g protein per 100 g, and only two exceeded 15.
