The category problem

Raw, pre-cooked, or “pre-steamed”?

The category is not consistently raw. It is consistently unclear — which is worse.

Pick up a bag of frozen dim sum and the instruction is usually: steam from frozen, 8 to 13 minutes, until cooked through.

Those last three words mean the thing in your hand is raw, and the last step of manufacturing is yours.

The name on the front is not evidence. At least one product in the survey carries a “pre-steamed” descriptor on the front, and its instructions say cook thoroughly to 74 °C.

Ten minutes of reheating and ten minutes of cooking are not the same instruction.

One is finished when the clock says so. The other when the centre is safe.

Why this is the hardest thing we do. Getting a cooked dumpling through a freezer without turning it to paste is a formulation problem before it is a logistics one.
